Cauliflower-crust pizza bites
I love cauliflower! My husband, however, doesn't share my passion for this vegetable. But luckily, cauliflower and Brussels sprouts are probably the only two food items that we have quite different feelings about. And plus, my husband is always up for my food experiments, so I'm not complaining here.
This time I thought that even though he doesn't favor cauliflower, he likes pizza. So if I hide cauliflower somewhere in the pizza, or maybe in the crust, he'll be fine with it. And I was right. Not only was he fine with it, he actually quite liked it! Also, since we had some vegetarians at dinner as well, I made a few vegetarian and non-vegetarian pizza bites instead of a single pizza. I'm happy to share this recipe with all of you.
CAULIFLOWER-CRUST PIZZA BITES
(Inspired by Buzzfeed's Tasty recipe, modified by me.)
Ingredients:
Crust:
- 1 head of cauliflower
- 3 eggs
- 1 tsp salt
- 1 tsp garlic powder or garlic salt
- 1 tsp pepper
- 1 tsp oregano
- 1/2 red pepper flakes
- 1 bunch of scallions
Toppings:
- marinara or tomato sauce (or any other tomato-based sauce - I had an eggplant tomato sauce)
- any cheese you prefer for the pizza topping ( I used goat Gouda cheese)
- 2 medium chopped tomatoes
- 1/2 cup canned chickpeas, drained
- 4 big slices of prosciutto
Preparation:
1. Preheat oven to 350F.
2. Grate the cauliflower into a bowl. You can use a food processor instead.
3. Sprinkle grated cauliflower with salt and let sit for 20 minutes. Then drain excess moisture from the cauliflower using paper towels or cloth.
4. In a bowl, combine drained cauliflower with remaining crust ingredients and mix well.
5. Form small pizza crusts on a slightly oiled baking sheet (mine were circular, about 2'' in diameter.)
6. Bake pizza crusts for 30 minutes until they turn golden brown.
7. Take the sheet out of the oven and spread the tomato sauce over each crust. Then use your creativity with toppings. Here are my topping ingredients in order: tomato sauce, prosciutto for non-veg / chickpeas for vegetarian bites, chopped tomatoes, sliced goat Gouda.
8. Bake for another 7-10 minutes. Enjoy these pizza bides either as an appetizer, snack or a side to your dinner meal.
