Cauliflower, Tofu and Brown Rice Warm Salad

As you may already know, I love salads and I really like experimenting with them. I also  enjoy warm salad bowls with warm grains, warm roasted veggies, greens and all other delicious toppings. It is especially fun experimenting with my salads after I get the organic vegetable box delivery as my fridge gets full of colorful vegetables and herbs.

This time I was feeling like a bowl of salad that's not only delicious, but also warming, which for me can be achieved with the use of spices such as curry or turmeric. So I investigated my fridge to see what would go well with these rich in color and flavor spices and decided to make a cauliflower, tofu and brown rice salad bowl. It turned out to be incredibly satisfying and filling - exactly what I was looking for!

CAULIFLOWER, TOFU AND BROWN RICE  WARM SALAD BOWL RECIPE

Ingredients:
- 1/4 cup dry brown rice mix, cooked (I made it in advance in my pressure cooker)
- 1/2 tbsp coconut oil
- 6 oz cauliflower
- 4 oz tofu
- 1/2 cup green peas
- 2 cups spinach
- small bunch of parsley
- 1/4 tsp turmeric
- 1/4 tsp curry powder
- a pinch of chili flakes
Optional: I also added 1/5 red bell pepper and 1/3 can corn (5 oz) as I had it in my fridge.

Dressing: juice of half lime + 2 tbsp balsamic vinegar + pinch of curry powder, salt. You can also add a tbsp of olive oil if desired.

Preparation: 
1. Heat coconut oil in a frying pan on medium heat. Place cauliflower, cubed tofu and green peas on a pan. Add curry powder, turmeric, chilly flakes and salt and saute for about 5 min. 
2. In a bowl, mix warm rice, cooked cauliflower, tofu and peas with spinach and other optional items, such as red pepper and corn. Add dressing and mix well. Enjoy it while it's warm.
